Apparently I am on a breakfast kick this week ❤
For those of you who are looking for an excellent post-workout breakfast might I suggest my favorite breakfast wrap.
I personally intermittent fast from 7pm (normally) to about 10 or 11am (sometimes noon if I can do it). I do have coffee and a glass of water (you should always have a glass of water right when you wake up, it helps to boost your metabolism).
Morning exercise is my constant….usually a walk or a run or both & light weights. Then a mid-day power yoga session (when possible) focusing on core or full body and then an evening meditation and yin or restoration yoga session focusing on winding down the mind as well as the body and normally I add a little neck stretch boost 🙂
I am always looking for meals that can sustain me and keep hunger at bay which isn’t an easy task. The more I work out the more insatiable my hunger is and that can be dangerous. Therefore I try to plan out meals that I know will fill my body with the nutrition it needs while also being realistic.
Lets face it, there are tons of articles out there with meal ideas that look amazing but you know you will never (a) have or buy the ingredients to make or (b) don’t have the time to make. Personally I don’t like to set myself up for failure so I consistently reach for obtainable goals.
Eating isn’t complicated, stick to clean, un-processed, wholesome foods and eat in moderation with smaller portions.
That being said…I bring you this recipe for the The Amazing Breakfast Wrap (which you can alter to your specific taste buds)!
Ingredients are as follows:
- Organic, gluten free wrap of your choice (I love spinach and tomato)
- 2 cage free large brown eggs (cooked anyway you like them, I prefer over-easy)
- 1/8 cup of kale or spinach
- 1/2 ripened avocado (sliced into quarters)
- a dash of sea salt
- a dash of onion / garlic powder
- 3 tablespoons of shredded cheese (I love Vermont cheddar)
- 2 thin slices of fresh tomato
Cook the eggs to your liking adding the kale/spinach, sea salt and onion powder to the eggs while cooking
Warm up the wrap in the microwave about 20 seconds
When eggs are cooked to your liking place them on the warmed wrap, add the avocado and sliced tomato and fold up the wrap
Be prepared for a tastebud explosion and prepare to be completely satisfied until your next meal!
