Yummy granola recipe

I’m leaving on a hiking trip tomorrow and felt like making a treat for the trails…

So I opted to make homemade granola using whatever I happen to have in my pantry!

Ingredients are as follows:

  • Cup and a half of organic rolled oats (old fashioned)
  • 2tbs of organic chai seeds
  • 2tbs of melted coconut oil
  • 2tbs of raw honey
  • 1 1/2tsp of vanilla
  • 1/2tsp of salt (actually I just used a dash)
  • Dash each of cinnamon and all spice
  • Cup of raisins
  • Cup of semi sweet chocolate pieces
  • Sprinkle of brown sugar

In medium size mixing bowl mix together the dry ingredients

In small bowl melt the coconut oil and add vanilla and honey

Add the syrup mixture to the dry ingredients

Save the raisins and chocolate for later – put aside

Spread the granola mixture on a banking sheet with parchment paper and bake in oven at 350 for 20 mins.

After 20 mins stir up the mixture and bake for 5 more with oven off.

Remove from heat and baking sheet and let cool for an hour on a paper plate or on paper towels.

Once granola has cooled and hardened, add chocolate and raisins or any dried fruit, nuts, etc.

Keep stored in airtight container for up to a month.

This turned out great!
